“May you have enough happiness to make you sweet,
enough trials to make you strong,
enough sorrow to keep you human
and enough hope to make you happy.” _Irish Blessing
Our treasured recipes are like old friends… meant to nourish, comfort and sustain us. This is one of the most self indulgent recipes I own. Luxuriously chocolate, beautifully satisfying and easy to prepare. Luscious chocolate brownies filled with Crème de menthe make a St. Patrick’s Day treat that’s truly heavenly.
Crème de menthe Brownies
1 cup sugar
1/2 cup butter
1/2 cup chopped walnuts 1/2 tsp. salt
1 tsp. vanilla
16 oz’s chocolate syrup
1 cup flour
2 cups confectioner’s sugar
1/2 cup butter
2 Tablespoons Green Crème de menthe
OR a few drops peppermint extract and a few drops of red food coloring for Valentine Brownies
6 Tablespoons Butter (no substitutes)
6 oz’s semisweet chocolate chips
Preheat oven to 350 degrees F. Grease and flour a 9″x13″ pan. Mix the brownies thoroughly, spread in pan and bake 30 to 40 minutes or until a toothpick inserted in the center comes out clean. Cool.
Mix the ingredients for the second layer and spread over the cooled brownies.
Melt the butter and chocolate chips together for two minutes in the microwave. Stir, cool slightly and pour or spread over the second layer.
Refrigerate until the topping is set, cut into small squares, then indulge yourself and anyone else you want to nourish, comfort or sustain.
“May those who love us love us. And those that don’t love us, May God turn their hearts. And if He doesn’t turn their hearts, May He turn their ankles, So we’ll know them by their limping.” _Irish Blessing
